Grapes: Chardonnay 100%

Soil: Calcareous/arenaceous from eocene, 60 meters a.s.l.

Training system: Guyot

Defense method: Biological

Harvest period: Last week of august / first ten days of september

Harvest method: Manual / mechanized

Vinification system: The grapes are gently de-stemmed and left in cold maceration for a short period. They are gently  pressed and the must is clarified by cold settling. The must is fermented in temperature-controlled stainless steel tanks

Maturation period:   After fermentation, the wine is left on the lees in stainless steel containers for six months. The bottled wine is aged in temperature-controlled rooms for at least two months

SENSORIAL ANALYSIS

Color:  Straw yellow with golden reflections

Aroma: Floral and wrapping, with hints of flowers broom, orange and white moss. Fruity with hints of banana, citrus and pineapple

Taste: Elegant, fresh, pleasant; notes of mandarin, pineapple, banana, grapefruit with one final recall of medicinal herbs

Pairings: First courses, white meats, soft cheese and fish dishes

Serving temperature: 10°-12°C
